Knit baby sweaters!
Seriously, if you have a bunch done up, you are SET whenever a friend has a baby.
Or you can find a fun hat or pattern like that and knit for charity.
Then you use up your stash with a satisfied conscience and are free to run out and buy more yarn.

If you are itching to knit something, but are being strict with yourself about using up stash, it works very well. And you feel so virtuous!
I have a baby sweater (the cabled raglan that I posted about in here a hundred years ago) that I plan to make my stash buster. Blankets are fun, too, and lots of lovely cabled patterns that would look beautiful in white.
I knit hats for cancer patients, once, too.

If you have lots of white wool, there's a pattern on the Sands website for a blanket they give to angel babies in hospital that I made a while ago. x

There are lots of preemie patterns online and you could contact your local neonatal unit to ask what they want/need?

Lots of patterns here http://www.eparenting.co.uk/knitfest...knitting.shtml
