Chick Peas/ Garbanzo Beans..


Opened a can the other night to add to salad. Turned out yummy so I thought I'd share. And I'm going to attempt to make hummus with the remaining beans...

-Salad-
1/2 can garbanzo beans
3/4 red pepper diced 1cm cubes
small shallot finely diced
1/2 english cucumber 1cm cubes
1/2 medium tomato diced
splash of balsamic vinaigrette dressing
salt and pepper to taste

I just mixed all of this above together and let sit in the fridge for about 45 minutes. Served it with warmed flat bread to soak up the dressing with afterward, Yum

-Hummus-
(my attempt with no recipe)

1/2 can of garbanzo beans
3-4 cloves roasted garlic (I like garlic, adjust to taste)
juice from 1/2 lemon
1 tbsp finely diced shallots
2 tbsp olive oil (adjust for texture)
salt and pepper to taste

Crush garbanzo beans and blend with remaining ingredients until it reaches desired consistency. I'm going to try this in sandwiches and with chips. Hummus can also be spread on flat bread, baked until warmed through and drizzled with balsamic vinegar (very yummy )
