A small piece of cod chopped into cubes
1 tin of plum tomatoes (we're going to blend them so if you don't have a blender you can get passata, but I think the plum tomatoes taste nicer)
1 medium potato, cubed
1 small carrot, cubed
2-3 handfuls of fresh spinach, chopped
Half a pint (300ml) baby vegetable stock or water
A bit of leek, sliced -as much as you like but I normally chop off a piece about as long as my index finger.
A tablespoon of olive oil
Heat the oil in a saucepan and add the leek. Brown for about 3 mins then add the carrot and potato.
Use a blender to Completely puree the tomatoes
Add the blended tomatoes (or passata) and stock to the pan of veg and bring to the boil.
Reduce heat and simmer for about 15 mins.
Once the veg is soft, add the cod and spinach.
Continue to simmer for about 5 mins then remove from the heat.
Once cooled either puree the whole lot or leave as it is depending on how your baby prefers.
