I personally love BBQ based foods and it's a shame your OH is burnt out on "cheesy pasta" because I was going to offer a great recipe for macaroni and cheese done by scratch. Nonetheless you can still make an awesome dinner.
I am going to give you my BBQ pulled chicken recipe. It comes out so juicy, flavorful, and falling apart in just a short amount of time that it's unreal and you can base the sauce off of your own persona taste.
Ingredients (8 servings)
-2 lbs boneless chicken breast
-a few pinches of pepper (and salt if desired, I don't use salt)
-1 onion (chopped)
-2 garlic cloves (chopped)
-2 cups or 16 ounces of your favorite BBQ sauce (I prefer sweet and smokey sauces)
-BBQ dry rub
-1/2 cup or 4.3 ounces of apple cider vinegar
-1 table spoon of hot sauce (optional)
-Monterrey jack cheese
-2 table spoons of light brown sugar
-Kaiser buns or sweet Hawaiian rolls (my personal favorite)
-Some other options to suit your taste are ketchup, lemon peel, ground mustard,Worcestershire sauce, and so on. You can add as little or as much as you want, the same with the above. It's just the amounts I like to use.
First, dry rub the chicken with a light amount of pepper. Then place in a heavy pot with onion, garlic cloves, and just enough water to cover the chicken. Once you have put just enough water in the pot to cover the chicken you need to add the BBQ sauce, vinegar, and your hot sauce if you're using any. Bring the pot to a boil and then reduce the heat to a simmer. Set your time and allow it to cook for a good 15-20 minutes.
Remove the chicken from the sauce and shred it with two forks, it will fall apart easily. Put the shredded chick in a large bowl and set to the side. Next, you're going to boil the sauce, skimming occasionally, until it's reduced by half. This takes about 15ish minutes. Add the sauce to the chicken and toss lightly to coat it evenly.
Then spoon heaping of the pulled chicken onto thick kaiser buns and sprinkle shredded Monterrey jack cheese on top of the meat. Serve and enjoy!
You can add grilled corn on the cob, double baked and loaded potatoes, salad, onion rings, corn nuggets, green beans, potato salad, broccoli, baked beans, cole slaw, au gratin potatoes, etc as side dishes. You can do whatever you want to go along with it. The recipe is super easy and I love making it because it cooks so fast and everyone loves it.
