No because it won't kill the botulism spores that may be present in the honey, as far as I know only irradiating the honey or exposing it to extremely high temperatures using specialist lab equipment is guaranteed to do that, normal cooking or roasting is not. You could try something like date molasses/syrup instead. It tastes quite similar to honey and cooks in a similar way but is not a botulism risk. There is also agave nectar and similar products made from grape juice or other fruit juices but I don't find those as nice and agave is very highly processed and not great for you xx
