Also had the probe completely still during all of this. Is it baby moving or just static?

If you were truly still with the Doppler, I would say that sounds like movement.

It sounds like bowel movement/peristalsis to me.

It was perfectly still or else I would have lost the heart beat, it's still hard to find and keep a hold of.

I thought it might have been bowel movement at first, but it's been happening for a few days now whereas I never heard it when I first found baby at 9 weeks.

Who knows really. Very cute to think it could well be though!
