JML Giant Cupcake.

    I have a JML Giant Cupcake tin.

    I have tried cooking with packet cake mix and my own but I cant get it to cook right.

    Does anyone have a good recipe for a giant cupcake?? I want to make the twins one for their 2nd birthday!

    Mum and i tried it and couldn't get it to come out in one piece....disaster.

    Ahh no hope for me then :haha: I am trying out all different ones but I think I am going to have to leave it to my mum to do.. She is pretty good at that kind of thing. She will find one that works

    Hi
    I've tried it today for the first time and the cake has turned out great.This is the recipe I've used.
    350g unsalted butter
    350g caster sugar
    6 large eggs, beaten
    2 tsp vanilla extract
    350g plain flour
    5tsp baking powder
    4-5 tbsp milk, at room temperature.

    Mix together butter and sugar until light and fluffy, about 2-3 mins with an electric mixer, very gradually add the beaten eggs, stir in the vanilla extract.

    Sift together the flour & baking powder and add to the cake mixture in two batches. Add the milk and mix until smooth.

    takes around 35-40 minutes to cook 180c/Gas 4 (I did mix the flour in with eggs to stop it curdling)

    I saw one of those the other day but didn't get it as I didn't think it'd come out the tin!

    it takes practice.. I had one that was silicone. I wanted it for Mylos christening/joint birthday cakes.. and I must have had 6 attempts before getting it right.

    tip: turns out better when cold.! :)

    You could just use a general Victoria Sponge recipe! Very easy and never fails. Not sure how big your tin is but this generally works for large cakes and if theres some left over you can always use it for small cupcakes on the side.
    8oz Margarine
    8oz Sugar
    8oz Self raising flour
    4 eggs
    (add cocoa or fruit if you want to. No need to substitute because it doesnt make a difference in these cakes)

    You can use any amount as long as you use half the amount of eggs as the rest of the ingredients in lb and oz :flower:

    It comes out the tin but it doesnt look like a giant cupcake! Lol.


    I dont have a problem making a cake mix. I have plenty. I cook cupcakes on a regular basis but its getting it to shape like a giant cupcake. Whenever I make it it never takes the shape because of the silicone so I think I am going to buy the tin instead of this one.

    I dont take it out when its hot. I wait til its cold. Im having a problem with the shape. It doesnt seem to look like a giant cupcake at all.

    I got the silicon one for Christmas but it just arrived today. I'm hoping to try it out tomorrow - wonder how it will work out! I'll let you know how I get on with mine! Does your's have the filling insert thing that you can either use or not use? xx

    Yeah I have the filling insert. Its rubbish with and without. I hope you have better luck and if you do can you send me the recipe lol.

    Mines now sitting at the top of the cupboard because I am sick of wasting my time with it lol.

    I think I am going to buy a tin instead.

    My giant cupcake moulds arrived today - the recipe book's pants (seems to involve 'packet' cake mix...) but I'm going to try doing a normal cake mix and will report back!

    I plan on trying mine out tomorrow so will let you know how I get on.

    I think alot of the shape comes from the decorating but we shall see!!!

    Here it is - my first effort with the giant cupcake moulds! I reckon it'll look pretty hot once it's iced and all! Might decorate one as a toadstool and do a fairy theme for my daughter's next birthday :)

    I totally winged it on the recipe cos I never had enough eggs to do a proper batter :rofl: it's come out nice tho! I just put some veg oil and milk in instead of the missing eggs LOL!

    Well i tried mine on Saturday but never got around to icing it because I got a chest infection and have been feeling horrendous ever since! It came out fine - no problem with the shape but next time I think I'll use even more cake mix because the bottom half was just a little bit small. The mix I used filled the top half but only 2/3 filled the bottom half. It was still ok but next time I'll make more. I think I used 12oz of marg, caster sugar and SR flour and 6 eggs (but it might have been 10/10/10 and 5 eggs!) - next time I'll go for 14/14/14 and 7 eggs and if I have too much mixture I'll make some fairy cakes with the excess. I greased the silicon tin really well and I left the cake in till it was cold. xx

    Ok thanks I shall try your mix.. What temp did you have your oven at?? I wanna try get the same and then it might look ok hehe x

    Right....I have just tried my tin again and this time I used 16oz of marg/sugar/flour and 8 eggs!! It came out fine - I left it in the tin till it was cold then iced it with buttercream. I cooked it at 180 and it took ages to cook - probably about 45 mins or longer.
