Meal idea..

    Hey you lovely ladies!

    I have my parents coming over for dinner on Boxing day and I have no idea what to cook! Obvsiously don't want a roast or anything like that!

    Want something nice, doesn't have to fancy and ideally not costing to much!

    Any suggestions?

    depends what you all like something like lasange (sp?) or spaggetti bolonase (sp, i always choose things i cant spell)
    there what my brother and gran are aruing over having on xmas eve at our dinner :rofl: x

    could just do a lil' buffet...like the iceland stuff?...won't cost much n not too much fuss

    turkey sandwiches :rofl: sorry couldnt help it

    i usually cook a whole salmon and come crusty bread, nice big bowl of fresh salad

    We always go to my parents Boxing Day and she does cold meats, salad, warm breads and pickles. It's lovely to be able to just pick at food after having such a huge meal the day before.

    I do like a buffet on boxing day...and it would HAVE to include turkey sandwiches!! :)

    i go to my aunties on boxing day and have another xmas dinner yummy..i cant wait

    We always have buffet food too on Boxing day,stuff that can just be picked at.
    If you have lots of Turkey left over and want to use that up cant beat a turkey curry lol.

    I agree with the ideas on buffet food, such a good idea! Try making like, an antipasto with salami, gherkins, maybe some mussels if you like them, french bread, cheese, smoked salmon, you could make a salad...things like that. My mum used to make it for dinner sometimes - it's easy to prepare and that way people can pick and choose. You could also do some soup with it so that people won't go hungry.

    You can't beat buffet food on boxing day. Turkey and beetroot sandwiches with a huuuuuge pile of pickled onions to work my way through. Love it! :mrgreen:

    What about Risotto? Easy to make, and uses up left overs well. I always do risotto when cooking for more than just OH and I, just serve with a salad, not too much fiddling about with different components, just one pot.

    What about jacket potatoes with whatever you have in the fridge turkey, salad, cheese etc.

    We normally have buffet food to on boxing day, but my parents are having that the day after when my sister goes to theirs! So thought it was mean to give it them twice!

    Risotto sounds lovely...but not sure my Dad would eat it! Might have to check! Hmm good idea tho!

    And Jacket potatos sounds good to, with left overs and some salad!
