Super easy meals?

I built up a big stash of frozen leftovers before the baby arrived, but now we're almost through them. It's still quite hard for me to cook much more than sticking things in the microwave as Lucas wants to be held all the time and DH works late so isn't around before dinner time. But I don't want to rely on store frozen meals or delivery.

So I'm looking for dinner ideas that are super simple and require little actual... cooking. E.g., chicken caesar salad wraps (which I can make with precooked chicken pieces). Any suggestions?
 
Only takes a few minutes and very few ingredients.

If you make carbonara the classic was it so quick and easy.
Cook spagetti in boiling water.
While it cooks, fry chopped bacon/lardons in a little oil.
After a few minutes through in some slices mushrooms or halved button mushrooms.
While that cooks whisk 2-3 eggs (3-4people) with salt and black pepper and grated parmesan.
Once the pasta is cooked, drain and mix with the mushroom and bacon. Just toss it all with the eggs/parmesan mix and serve immediately.
Only takes 15 about minutes.
