My 13 yr old helps out on a farm. Told us he was bringing home a free range Turkey but we've ended up with a Goose and a duck! I do have a turkey crown too.

I've never cooked Goose before. I've read it should be raised in the tin so the fat drains but other than that I dont have a clue what to do- what herbs go with Goose, if im best removing the legs first as apparantly they take longer to look so the breast will dry out? Foil or no foil, crispy or not crispy??!!

Anyone have tips as its going to be the main meat so dont want to cock it up. I dont even know if I like Goose?!

I am not sure we have ever had goose before!

But gordon ramsays recipe looks lovely! Hope it goes well.
