Bacon, chilli and pepper pasta

1 basics red pepper, deseeded and sliced
1 basic yellow pepper, deseeded and sliced
2 tablespoons olive oil
Half red chilli, deseeded and finely sliced
200g basics bacon, sliced into 2cm pieces, fat removed
85g basics fresh black pitted olives, halved
1 x 125g pack basics mozzarella cheese ball, torn
extra virgin olive oil to serve, drizzle
Basil leaves, freshly torn

Try frying the peppers in olive oil in pan over a medium heat for about 10 minutes or until the peppers are beginning to soften.
Add the chilli and bacon and fry for a further 10 minutes over a medium heat until the bacon juices have evaporated and the bacon begins to brown. Meanwhile, cook the penne following pack instructions.
Drain the pasta and add to the bacon and pepper mixture. Add the olives and mozzarella and stir to combine. Season with salt and freshly ground black pepper and serve with a drizzle of extra virgin olive oil and some freshly torn basil.
