In the beginning when he had to have long pieces of food (part to hold and part to eat) I'd just cut the pieces really long.. either strips stir fried or if it was baked or BBQd they'd just be cut longer after. Once he figured out the pincer grip they could be smaller.
I didn't start serving chicken until my LO had perfected her pincer grip so I just give her little bite-sized chunks for her to feed herself one at a time. I prepare the chicken the same way I eat it normally - usually seasoned and then roasted/baked but sometimes pan-fried with sauce. She seems to like it however I make it!
