We got a new BBQ on the weekend, stainless steel, side burners, a rotisserie piece.. it's pretty Anyways included with it was a cookbook, so here's the recipe for "Plank Smoked Chocolate Chocolate Chocolate Brownies" (TBH it sounds like a lot of work but may be worth it to someone who loves to BBQ or who just wants to say they did it!):
9 x 13 in baking pan, well greased
Untreated cedar plank, soaked for at least 12 hours
1 3/4 cups (425mL) all-purpose flour
2 tsp (10mL) baking powder
1 cup (250mL) butter
1 cup (250mL) unsweetened chocolate, coarsely chopped
5 large eggs
1 tbsp (15mL) vanilla
3 1/2 cups (875mL) granulated sugar
1/2 tsp (2mL) salt
1 cup (250mL) semisweet chocolate chips
1 cup (250mL) white chocolate, coarsely chopped
1 cup (250mL) macadamia nuts, coarsely chopped
3/4 cup (175mL) whipping- 35%- cream
1 cup (250mL) semisweet chocolate chips
3 large eggs
1/3 cup (75mL) granulated sugar
pinch of salt
1. Sift together the flour and baking powder.
2. In a heavy saucepan, melt butter and unsweetened chocolate over low heat, stirring occasionally. When melted, remove from the heat and let cool slightly.
3. In a large mixing bowl, beat the 5 eggs, vanilla, 3 1/2 cups sugar, and salt for 10 minutes at medium speed. Blend in the melted chocolate at low speed until just mixed (don't overbeat).
4. Gently stir in the 1 cup chocolate chips, white chocolate, and macadamia nuts.
5. In a heavy saucepan, heat the cream and 1 cup chocolate chips, stirring constantly until chocolate is melted and the mixture is smooth. Cool slightly.
6. Beat the 3 eggs, 1/3 cup sugar, and salt until foamy, 4-6 minutes. Stir into the melted chocolate.
7. Preheat the grill to medium or a touch higher. (375F, 190C)
8. Pour the brownie mixture into the prepared pan and gently smooth to level. Spread the topping mixture over the brownie mix.
9. Set the soaked plank on the grill and set the brownies on the plank. Close the grill lid and bake for 40-45 minutes.
10. Cool for several hours or overnight before cutting into squares.
*** the picture in the book shows these brownies with peanut butter on top, slightly browned mini-marshmallows, and a couple of chocolate chips. My teeth hurt just thinking about it!!
Oh, and it says it makes 18-24 squares, prep time is 30 minutes, cook time is 45 minutes.
