Cake Recipe for GD?

Anybody have a good cake recipe? I wanted to make a brithday cake for a friend, but I hate the thought of baking it and then sitting there salivating while she eats it. :blush:

I've looked on some websites, but everything I find has sugar in it. I know small amounts of sugar are okay for normal diabetics, but not for those of us with GD -- every time I mistakenly have some sugar... my levels go through the roof.

I haven't tried these, but I did find them. They don't use sugar, but they do call for the artificial sweetener or sugar substitute.

Chocolate Coffee Souffle Cake

9 tablespoons unsalted butter
2 teaspoons flour
4 ounces bittersweet chocolate
2 large eggs
2 egg yolks
1/2 cup SPLENDA® No Calorie Sweetener, Granulated
1 tablespoon unsweetened cocoa
2 tablespoons ground coffee or instant espresso

1. Preheat oven to 450°F (175°C).
2. Butter four (4-ounce) coffee cups or ramekins with 1 tablespoon of butter. Put them on a baking sheet.
3. Put chocolate and the remaining butter into the top of a double boiler, over medium low heat until soft and almost melted.
4. Beat eggs, egg yolks and SPLENDA® Granulated Sweetener together in a mixing bowl until smooth.
5. Whisk chocolate and butter together then slowly add to egg mixture, stirring until just combined. Whisk in the flour and coffee.
6. Divide batter between prepared molds and bake for 6 to 8 minutes.
7. Serve cakes immediately, dusting tops with cocoa.

Makes 4 servings.
Preparation Time: 15 Minutes
Total Time: 23 Minutes

Optional: Garnish with whipped cream. Mix 1 cup of cream and 2 tablespoons of SPLENDA®; Granulated Sweetener chilled then whipped until soft.

Bittersweet Chocolate Torte


Torte:
6 tablespoons stick butter or margarine
4 ounces unsweetened chocolate
1/3 cup fat-free milk
1/3 cup sugar-free apricot preserves or apricot spreadable fruit
2 teaspoons instant coffee crystals
1 large egg yolk
1 teaspoon vanilla extract
1 1/2 cups Equal® Spoonful*
3 large egg whites
1/8 teaspoon cream of tartar
1/4 cup all-purpose flour
1/8 teaspoon salt

Rich Chocolate Glaze:
1 ounce semisweet chocolate
1 tablespoon stick butter or margarine
Whipped topping, fresh raspberries, and/or fresh mint (optional)

1. For Torte, heat 6 tablespoons butter, 4 ounces unsweetened chocolate, milk, preserves and coffee crystals in small saucepan, whisking frequently until chocolate is almost melted.
2. Remove pan from heat; continue whisking until chocolate is melted and mixture is smooth. Whisk in egg yolk and vanilla. Add Equal®, whisking until smooth.
3. Lightly grease bottom of an 8-inch round cake pan and line with parchment or waxed paper. Beat egg whites and cream of tartar to stiff peaks in large bowl. Fold chocolate mixture into egg whites; fold in combined flour and salt. Pour cake batter into pan.
4. Bake in preheated 350°F oven 20 to 25 minutes or until wooden pick inserted in center comes out clean. Do Not over bake.
5. Carefully loosen side of cake from pan with small sharp knife, which will keep cake from cracking as it cools. Cool cake completely in pan on wire rack. Cover and refrigerate 1 to 2 hours or until chilled.
6. For Rich Chocolate Galze, melt 1 ounce semi-sweet chocolate and 1 tablespoon butter in small saucepan, stirring frequently.
7. Remove cake from pan and place on serving plate. Pour Rich Chocolate Glaze over top of cake, letting it run down sides. Let cake stand about 1 hour or until glaze is set. Garnish top of cake with prepared whipped topping, fresh raspberries and fresh mint, if desired. Cut cake into wedges.

Makes 12 servings.

* May substitute 36 packets Equal sweetener

Let me know how they turn out! I'm always worried that one day I'll have diabetes since my grandmother had it. I love chocolate and sweets, so if these work out for you, I might just keep the recipes. hehe
 
I hate to say it, but given my utter fatigue the last few days, I just bought my friend a cake and looked on sadly as she ate it LOL. I will definitely try this when I find some energy again though.
 
LOL. Don't feel bad. I'm sure she didn't mind at all! It's the thought that counts.
