I know I can't do this on any legal documents such as the birth certificate or passports, without the FOB's permission but I know that you can change the surname for things like when they go to school. Although it's not a legal change your child can be "known as". Just wondered if anyone had done this?

Not quite the same, but a friend at school had a different first name on her BC, but she was registered as a different name to her BC at school and the doctors and it was never questionned for her.

Her parents couldnt decide on a name together, so they put one on the BC but called her by a diff name lol

Hope that makes sense!

My sister in law has 2 children from a previous marriage and when she married my brother, the children wanted the same name as their mum. She 'added' her new married name to their dads surname and double barrelled them. Like you say you can't do this without the father giving permission if you want to change them legally, but she has done it for school etc in the same way you mentioned.
Their dad wasn't very happy when he found out, but it was important for them to have the same name as their mum and feel part of the family which she now has with my brother and their son.

I am pretty sure you can use a known as name but for legal documents it has to be the real name x
