These are a tad bit time consuming, but if you've got the free time and are in the mood for some delicious perogies... these are perfect!
24 servings
INGREDIENTS
3 cups flour
1 1/2 tsp salt
1 egg
1 cup cold water
6-7 baking potatoes
2 1/2 cups shredded cheddar cheese
Bundle of chives, chopped
Salt and Pepper to taste
DIRECTIONS
Dough:
*Combine flour, salt, egg, and water. Mix together. Cover mixture and put aside.
Filling:
*Boil potatoes and mash.
*Stir in cheese, chives and salt and pepper. (If you want, you can also add things such as cooked bacon or ham...mmmm)
*Roll dough out on a floured surface.
*Cut dough into circles and place a spoonful of filling into the middle.
*Fold over and pinch edges.
*Boil perogies for 4-5 minutes or until they float.
*Transfer to a skillet with oil and brown perogies (yummy if you fry with sauteed mushrooms and onions!).
*Serve with sour cream.
