i made this last weekend and it was lovely, really filling.
Ingredients
2tbsp vegetable oil
1 onion, finely chopped
1/2tsp ground ginger
3 garlic gloves, crushed
1tsp ground cumin
1/4tsp ground turmeric
1/2tbsp mild curry powder
230g chopped tomatoes
200ml chicken stock
salt and pepper
2 medium sweet potatoes, peeled and cubed
3 large skinless chicken breasts, sliced
Place the oil in a saucepan and warm over a meduim heat, add the onion, ginger, garlic, cumin, turmeric and curry powder. Saute for 1-2mins
pour the chopped tomatoes and chicken stock into the pan, season to taste and simmer for 2-3mins.
add the sweet potato and chicken to the pan. Cover and simmer for 25mins or until the chicken is fully cooked and the sauce has thickened.
serve with boiled rice
