I soak my fruit for at least 3 days!. Very easy to make but the recipe i use takes 6 hours to cook, always turns out fantastic. I'll post it if you would like?

OK here goes!!

12oz brown sugar (I measure all the fruit, without the cherries
12oz butter 3 days before cooking. Add a little Brandy
6 eggs and keep turning it)
1Lb plain flour
1 tsp mixed spice
1 Lb currants
1Lb sultanas
8oz raisins
6oz candied peel
3oz glace cherries
2 tbsp dark treacle
(You can add Almonds if you would like)

1. cream the butter and sugar until light and fluffy (use a mixer if you have one).
2. Now add the eggs in small amounts to the mixture, add a teaspoon of flour if it curdles.
3.Sift the flour and spice until it's all mixed together.
4.Add the fruit and peel, use your hands if it's easier.
5. Add the cherries and the treacle.

Line your cake tin inside with grease proof paper. And outside with brown paper (twice) and tie it with string, make sure it overlaps the tin at the top by a couple of inches (to stop the edges of the cake burning) and stand it on two layers of brown paper in the oven.

Warm your to oven 150deg (sorry don't know Gas). Then Cook your cake at 150deg for 1 hour then turn it down to 140deg for the remaining time.

Cook cake for a total of 6 to 6.5 hours.

PM if you have any issues or can't understand what i've written:thumbup:. It really is worth the effort and not as hard as it sounds!. I cook mine in October, wonderful by Dec:happydance:
