1/2 cup butter or margarine, at room temperature
1 cup sugar
1 egg
1 tsp vanilla
1 1/4 cups all-purpose flour
1/2 tsp baking soda
Pinch of salt
2 cups Rice Krispies
1 cup chocolate chips
1/2 cup walnuts, coarsely chopped (optional)
1. Preheat oven to 350F. Lightly grease two baking sheets.
2. With an electic mixer, cream the butter or margarine and sugar until light and fluffy. Beat in the egg and vanilla. Add flour, baking soda, salt, and fold in.
3. Add the Rice Krispies and chocolate chips (and nuts if you are adding them). Stir to mix thoroughly.
4. Drop spoonfuls of the dough 1-2 inches apart on the prepared baking sheets. Bake for 10-12 minutes, until golden. Transfer to wire rack to cool.
** I didn't make this with nuts. Without them they're really yummy though! I made them with the holiday rice krispies around Christmas time.
