Cupcake frosting

Hey guys,

Now that I've finished school and am off with LO over summer, I've been baking alot. Braden Loves cupcakes, so I tend to make them, but i haven't been able to master the Frosting.

I've tried making butter icing, making it with shortening (veg fat)...etc, but i cant seem to get that crisp icing. For any of you who aren't sure what I mean, i mean the kind of icing on costco cake. Crisp on the outside then soft when you bite in.

Does anyone have the trick?? Or know if there is something I'm not using that I should be??

Butter icing...

The way I would make it.

Powdered sugar....2 cups
Soft butter...........1/2 cup
Water..................2 tablespoons
Imatation Vanilla....1 small capfull

Mix with an electric hand mixer, and a small amount of water if needed.

About the butter flavor, ummmmmm probably add more butter.

um the last time i made frosting i did with cream cheese its yummy
 
I replace the butter with half lurpack and half trex.

Makes it very white also! :D
 
I do 80g softened butter and 250g icing sugar and mix them really well. It'll make a reallllly stiff icing and will take awhile but eventually it'll come together. Then you add 25ml of milk and your flavouring and beat it again for 5 mins. It'll look lumpy at first but keep beating and it'll go really light and fluffy. It is a crusting buttercream.
