How do I know when my supply is really gone?

Lo has been nursing only at night before bed and then first thing in the morning for about the past month, and the rest of the day takes frozen milk from my stash or cows milk. I also stopped pumping a month ago. I know technically my supply should continue add long as she nurses on the same schedule all the time, but it seems the last few days she's been suckling harder near the end of her night session, and seems hungry sooner than normal after her morning session. Makes me wonder about whether I'm losing my milk. How do I know when to quit?
