I need help & tips *updated with 2nd attempt pg2*

Ive had my first go at making cupcakes today (want something to do whilst on mat leave that I can do with my 3YO etc and this seems like the perfect hobby to take up)

So... Today I had my first go at making cupcakes (maple syrup and pecan) I followed the recipe to the dot but my butter icing seems... not sloppy but it isnt 'high' iykwim (see pic)

Should I of added more icing sugar or something? =/

Would appreciates and help/tips.

Is it just icing sugar, butter and a drop of milk? It looks to me like you need to add more icing sugar. I whisk mine until i get peaks when i lift the whisk up.

Maybe some of the more experienced mum might have better tips, Ive just upped my hobby lately!

They look very yummy though :) xx
 
Hey, it was 50g butter, 3 tablespoons maple syrup 435g icing sugar

perhaps it was the maple syrup that caused the problem and it needing more icing sugar then. I dunno.

Think I might have another go on Thursday afternoon. Got the bug to try get it right. lol.

Thats what I'm like! Been asked to make a birthday cake for someone and it took me ages to agree coz i knew I'd want to do it perfectly!!

Ive never made that icing before (sounds very yummy though!) but I still think that is your main problem.

Its annoying isnt it! Lol! Every thing I do I want it to be perfect!

Will defo post 2nd attempt pics. Just gona try normal butter icing and see if i can perfect that before adding in flavors again

Thats what Ive done but now ive pretty much got it down to a tee i want to move on to cream cheese frosting, I dont think my figure can cope with more cake though :haha:

Ok well for a start anything liquid that goes into buttercream loosens the consitancy so if your wanting a thicker buttercream you need more icing. I'd say add extra to the cake mix itself and dont add it to the icing, sometimes they use pictures which arent the product that they made. Secondly, I think that icing was more like a merangue icing than a buttercream cos its very glossy unless thats glycerine.

Not had chance at a 2nd attempt yet as ive been bogged down with college work but im going to have another go at the start of next week. Fingers crossed to a better attempt.

Hope it comes out ok.

You can buy essence which would work better but not sure whats available that would go with pecan
 
I put the maple syrup in the cake mix too, and IMO i thought the maple syrup in the icing made the whole thing really sickly.

Wont be trying that one again. Going to try and perfect just a normal butter icing before i move onto anything fancy again. Ill make some halloween cakes with my LO just using the gel food colouring and chocolate cakes & pray they come out much better!
