Lentil soup anyone?

Can anyone tell me a simple way of making lentil soup? xx
 
Soak your lentils for about half an hour.

Oil in a pot, chopped onions, other chopped veg, simmer for about half an hour.

Rinse lentils and add them, along with stock.

Season with salt and pepper and simmer for about 15 mins.

Blend. Check seasoning, and alter to taste. Add half a pot of single cream.


That's generally how I make all soups haha.

You don't reeaaally need to add it, it would be fine without I think. The cream makes it tastier, but I've done some soups without it before. Not sure how adding milk instead would work.
 
Great...il give it a try...how much lentils do you use? and how many does it serve? x
 
I'm not one for measurements, just add as I go really. Depends if you want it more lentilly or more vegetabley. Probably about 250g of lentils plus the veg? Probably serves about 4-5.
