these are really yummy! each muffin contains only about 150 cal's & 0.3g fat (0.1g saturated fat)
305g Wholemeal self raising flour
1 level teaspoon bicarb soda
100g caster sugar
pinch of salt
1 teaspoon ground cinnamon
340ml skimmed milk
2 large banana's mashed
2 apples peeled, cored & grated (i use granny smiths)
1 tablespoon grated orange zest
1 teaspoon vanilla extract
Preheat oven to 180 C / Gas mark 4. Grease muffin tin or line with paper muffin cases.
In a bowl, stir together flour, sugar, salt and cinnamon. Stir in milk, banana, apples, orange zest and vanilla extract. Spoon mixture into prepared muffin tin.
Bake in preheated oven until golden brown, about 25 to 30 minutes. Check bake time by inserting a knife or skewer into the centre of a muffin. The muffins are done when it comes out clean.
