Pumping with an oversupply/OALD

I want to start pumping and freezing milk for when we decide to introduce the occasional bottle (for going out for an evening or something). I'm not sure if I actually have an oversupply or not, but based on my son's reaction when I let down, I'm pretty sure I have an overactive let down. (Is borderline painful during let down sometimes).

How often/how long can I pump without it increasing my supply?

ETA: He usually feeds about 10 minutes on only one side, every 2-2.5 hours if that matters.
