Red cabbage easy recipe ideas please!

Hi all, I've got some red cabbage to go with our sausage and roast veg dinner this evening.

I want to jazz it up a bit without going out and buying anything such as cider vinegar (which I've seen in a lot of recipes).

I have a fairly good range of spices in the cupboard, some balsamic vinegar and some apple sauce. I was wondering whether mixing some applesauce with it would work?

Any suggestions would be gratefully received!
 
cups finely shredded red cabbage
2 tablespoons dill pickle relish
2 tablespoons reduced-fat mayonnaise
2 tablespoons nonfat plain yogurt

It's intended to be put on po' boy sandwiches, but it's probably be okay as a jazzed up side, since it's a variation of coleslaw.
 
Shredded red cabbage, sauteed in butter, add balsamic vinegar + toasted pine nuts.
