Rio is 8 months. To cut it short he was on purées from 4 months and just recently refuses to be spoon fed and doesn't know how to do it himself.
I've offered some finger foods, he chokes on most still. (Yes, chokes. I know the difference between a gag)

the last few days he's had toasted bread with cheese, and omelette. But still doesn't seem to handle anything else other than his organic carrot puffs.
Any other ideas what I could try? He can't just have bread and eggs every day can he :/

Aiden prefers finger foods too. We are still on softish stuff so same as you, I give him toast soldiers with either humous or cheese spread, omelette or chunky scrambled egg. Sweet potato wedges are quite soft. His favourite thing is chunks of pear which I now cut up quite small as he will stuff the lot in his mouth if he could...I started off by peeling and boiling it a little to soften it more but i don't need to do that anymore.

Have you tired normal spoon fed meals rather than purée? My Lo went off purées pretty quick but will eat stuff like mashed potato and beans/spagetti or shredded chicken mixed with mash. Ooh I did pasta today, mixed it with abit of oil and crushed garlic...abit boring really but he loved it and had no problem picking it up and swollowing it as it was so soft.

Someone reccommended me mini shredded wheat soaked in milk but that just got crushed between lo's fingers and smeared everywhere lol.

I've given my boy scotch pancakes this week and he loves them, going to try crumpets next week,my boy loves the crunchy carrot sticks!

Rice cakes were a big hit early on (actually still are) and you can put anything on them (avocado, banana, hummus, yogurt, cream cheese, etc.). What about fruit (banana, clementime, strawberries)? They're soft and usually babies like them because they're sweet. You might also try giving him a bowl of porridge or fruit yogurt that he can dip his hands into and feed himself, but it isn't big chunks yet. Soup with bread dippers (again he can dip his hands in, but also suck on the bread, great way to get veg into them). Blueberry or strawberry pancakes, again they're soft but also have fruit in them which is good for them. Oh, and twice baked jacket potatoes are also really nice and eat for them to eat (basically mash and cheese baked in potato skin).

Also, really you just might need to give him more time. We started BLW at 6 months and it really took about 1.5 months for my daughter to get into it. It's learning a new skill and it takes time. It kinda doesn't matter that they have too much variety at this point, as long as you offer different things, he'll eventually get interested in them. My daughter has gone through phases when all she'd eat was fruit and yogurt for a month. Then she's right back to normal - last night she had chili and rice, tonight a stinky cheese tart and sweet potato. If you give him time, he'll get it and enjoy his food.

When I offer him a bowl (soup a couple of days ago for example) he tips it straight out and smears it all over himself lol.
He's started eating a bit better since I've posted this. Still won't have anything via spoon though.
He will eat bits off me when we sit down for a meal, so I brought in a baby spoon to feed him with and he wouldn't have it! But will have exactly the same food off my fork! Fussy boy lol x
