sauage casserole (without packet mix)

ingredients:

spicy sausages (linconshire etc) - i use 14 for 4 of us (kids like this meal)
1 onion or onion powder
1/2 clove garlic or garlic powder
1 25ml glass red wine (i use a fruity)
1/2 pint chicken stock/gravy
tablespoon honey
splash worcestershire sauce
splash balsamic vinegar
tablespoon tomatoe puree
teaspoon mustard
dried mixed herbs
salt
black pepper
potatoes


how

bown the sausages under the grill or in a large saucepan. (move to saucepan if done under the grill), add the onions finely chopped and the garlic crushed, cook unti sticky. add the glass of red wine and reduce to a syrup. add the chicken stock/gravy and mix. add the honey, worcestdhire sauce, balsamic vinegar, tomatoe puree, mustard and mixed herbs. mix well, allow to bubble for few mins and add as much/little salt and pepper as you wish for extra taste.

transfer all to an oven dish and cook for an hour gas mark 4 or 180C. cook the potatoes and mash them - i cook potatoes in saucepan from above without washing as it gives the potatoes slight flavour of the sauce. serve and enjoy!


this has taken me a few times to get just right, but it didnt help when morrisons STOPPED doing the red wine we all liked taste of and i had to find another 1!
 
We love sausage casserole in this house! Use a very similar recipe to you (except dont add the wine!!) but add alot more veg into it and cook it for a bit longer in the oven! The good thing about it is if we havent got time to do the mash, you can add it to anything, rice, chips, roast potatoes, tastes lovely with anything!!
 
it is 1 of those meals like stew you can add/take out most things etc and it still works.
 
Oh yum, yum I want that now for my tea.
