Yummy, easy and can be cheap!
-Chicken breast fillets or boned thighs.
-Smoked streaky bacon.
-cooked or frozen, thawed spinach
-garlic butter made with butter and garlic to taste
-mushrooms
-tomatoes or cherry tomatoes
Make a slit in the chicken breast fillets if you are using them, no need if boned thighs. Open the chicken out and spread with garlic butter. Place on some spinach and a few sliced mushrooms and rool or fol dback up. Wrap in 2-3 slices of streaky bacon and secure with cocktail sticks. Place all in a dish with halved cherry tomatoes or quartered normal tomatoes and dot with garlic butter.
Bake in an oven at 200C for 25-30 minutes.
*half a chicken breast is plenty for one person with this recipe, unless they have a huge appetite. If using whole chicken breasts, you might need to bake for longer.
