Ingredients
1 onion
8 slices smoked bacon cubed
2 carrots
2 cans tomatoes
1tbspoon tomato puree
handful wholemeal pasta
4 chicken or ham stock cubes dissolved in 1 pint of boiling water
Method
heat some olive oil in saucepan, add bacon & onion, fry until onions are cooked add carrots cover & sweat for 8 mins then add everything else, bring to the boil then reduce heat & simmer for 20 - 30 mins or until carrots really soft. Add more water if too thick.
You could throw in a handful of frozen peas if you like them!
