Veggie Dinner Ideas

Looking for some nice easy veggies recipes!
Oh and we like meals that fill us, were not greedy just like big meals

I always cook a pasta bake but OH is moaning I don't do much else lol
He's not a jacket potato fan either

I like to use lots of chopped up veg like onion, peppers, mushrooms and courgettes but don't want the veg to be the 'main' ingredient

I cook spag bol, chili and lasagna with the quorn mince.

I also do a big omelet, with cheese and whatever veg I have.

Toad in the hole with veggie sausages.

Peppers stuffed with rice and veg with melted cheese.

Veggie quiche, I make the bases, but you can buy them to save time.
