Very yummy fish pie and freezable

This is yummy we are having it tonight..yes its hot but oh well! you can use mash or puff pastry tonight is puff pastry as had it in freezer and adapt it as you want which again I do depending on whats in.

I then freeze the pie mix and top with mash/pastry as i want.

For the mix:-does 6

2 eggs
2 handfuls of spinach ( we use frozen)
1 onion finiely chopped
1 carrot finely chopped
oil
285ml double cream ( I use milk)
handful fo cheddar or parmasan
juice of a lemon
tsp mustard
parsley
haddock/cod/pollack skinned and boned cut into strips
nutmeg-if u have it

preheat oven 230/450F/gas 8

hard boil the eggs then peel and quarter them

steam spinach for a minute then squeeze out excess moisture.

fry the onion and carrot in oil for 5 mins then add cream and bring to boil. remove from heat add cheese lemon juice, mustard, parsley.

put spinach fish and eggs in dish and pour over the sauce..

Depedning on your topiing put your pastry or mash on top now. cook until golde nfor 25-30 minutes.

yummy with peas or baked beans and ketchup :D
 
I've been looking for a good fish pie recipe for a while now and this seems straightfoward enough, even for me. Thank yoooo! :thumbup:
