What cheese can I use to replace gorgonzola dolce in a salad?

My friend requested I make my roasted strawberry salad for dinner on Sunday. I love that salad but I make it with gorgonzola dolce which I can't have :(

I've considered just picking around the cheese and maybe just having a bite or 2 with cheese but its a pretty soft cheese and mixes into everything.

Feta doesnt work with this salad.

I use a mix of endive and mixed baby greens, roasted strawberries, caramelized walnuts, gorgonzola dolce and a homemade balsamic poppy dressing.

Any suggestions?

Pasteurized mozzarella? It's quite creamy but will hold its shape...

Blue cheese is ok to eat as long as its pasteurized. I think gorganzola is a type of blue cheese right?

I don't think the gorgonzola dolce is pasteurized and even pasteurized soft blue cheeses are a listeria risk because they are softer and can hold more moisture and thus more susceptible to listeria. The same is true for pasteurized brie etc. which is why we should only eat it if its been cooked.

Also the mold isnt ideal for us to consume during pregnancy.

Mozzarella wont work since it doesnt have the strength in flavor that the gorgonzola has.

I've been considering using stilton which is hard blue cheese but it still makes me nervous.

Could you serve the Gorgonzola on the side? That way people could sprinkle it on if they want it, but yours would still be safe for you. Or pull out a separate portion of salad for yourself prior to adding the cheese, then add the cheese to the remainder? I have been eating similar salads minus the blue cheese/feta/etc. and while I miss the cheese, the salads are delicious on their own.

I think I may end up doing that. I was hoping for a good cheese to complement the flavor of the salad but if I can't find a good option I will just serve the cheese on the side.

If you find one that works, I would love to know! I keep looking longingly at the cheese counter while I am shopping. I miss good cheese!

How about goat cheese? I've made strawberry salads with goat cheese in them before and I love the combination. You could even do goat cheese medallions that have a panko crust on them, bake them in the oven and then they're heated through so no risk of listeria. Even though I think most US goat cheese are made with pasteurized milk these days.

Good lord that sounds deliscious..... My mouth is watering. :munch:

Why can't you have the cheese you usually use? I thought all store bought cheeses in the US were made with pasteurized milk now?
