What to do with pumpkin??

Hello ladies, I have 3 pumpkins I picked from a patch growing in a garbage heap up on a hill behind my house!

So one will be a jack 'o latern next week, what shall I do with the other two? They're pretty big!
 
When we've caved ours we made apple and pumpkin crumble....mmmmmm......or you could try good old pumpkin pie.....:munch:
 
Anyone got a tried and tested pumpkin pie recipe? Always wanted to try that!

Can't have walnuts, orange or condensed milk in though... allergic to the first two, also allergic to dairy products but most can be swapped for oat milk/cream, except condensed milk.

You can also cube it up and roast it in the oven for about 45 minutes at 425 degrees F(turning once half way through). Toss it in a bit of olive oil before placing it on a roasting pan. When it comes out, sprinkle with a bit of brown sugar and cinnamon.
 
Pumpkin also makes a great soup - there are lots of recipes on the internet, so google to find one that you like the look of.

When you're done, divide it up and freeze it so you always have some for those rainy days :)
