Crispy topped creamy spinach.
** I make it with low fat versions of cheese, cream cheese, and salad dressing to cut back on fat
2 packages (300g) each, frozen spinach, thawed, and well drained
1 tub (250g) cream cheese
1/2 cup ranch salad dressing (low fat or regular work the same)
2 eggs, lightly beaten
1 1/2 cups shredded cheddar cheese, divided
1 cup crushed ritz crackers, divided
Preheat oven to 375F. Mix spinach, cream cheese spread, dressing, eggs, and 3/4 cup of the shredded cheddar ceese in a large bowl. Sitr in 1/2 cup of crushed crackers.
Spoon spinach mixture evenly into greased 2L ovenproof casserole dish. Sprinkle with remaining 1/2 cup crushed crackers and remaining 3/4 cup shredded cheese.
Bake 20-25 mins or until heated through and cheese on top is melted.
