Any one celebrating eid? What's on your menu?

So I've just sat down to decide what to make for eid . And just being nosey to see what ever one else is cooking? X
 
Yeh most of the cards you can buy say that or eid greetings. X
 
I'm not cooking on Eid, it's a holiday :p

On Thrusday everyone will be fasting, I'm planning to make stuffed vine leaves & lamb roast, with salad & rice on the side.

Tonight I have friends coming over for dinner, I'm cooking lasagna, puff pastry chicken bake, puff pastry cheese bake, pizza, peas & minced meal fried rice, mashroom soup, cucumber & yoghurt salad, pasta salad & caesar salad.

As for Eid menu....It has to be lamb, obviously! And lots of it!

Eid-Al'Adha is when you sacrifice a lamb as you know, so this is on the menu for a fair few days around Eid.

Im looking forward to mums slow cooked lamb tajine which apricots, almonds and prunes.

We also have lots of sweets, cakes and biscuits and exchange gifts.

- 1 onion
- green, red, & yellow capsicums
-1/2 kg of chicken breasts
- puff pastry (the rectangular block)
- chicken mix spices (should have curry in it)
- 1 cube of veggie stock (optional)
- shredded cheese (modzerella & cheddar)
- salt & black pepper (don't add salt if the stock cube has salt in it)
- 1 egg

-Chop all veggies into small cubes (you need 1/2 of each capsicum only)
- cut the chicken breasts into cubes
- cook onion with 1 tbsp of veggie oil (i use sunflower oil, dont use olive oil) until soft
- add chicken & cook on high then reduce the fire
- add the capsicums, spices, salt, pepper & stock
- cook on low for 20-30 mins
- butter the tray (I use lurpak ghee instead of butter, you can use veggie oil) spread 1/2 the dough on the kitchen counter then put it in the tray (I use Pirex/ glass oven rectangular tray)
- add the chicken mix then cheese
- spread the other 1/2 of dough over it. Cut it into squares using a wet knife
- beat the egg, & brush a thin layer on the top
- bake it in the oven for 20 mins on midium or until it rises & becomes golden (check the bottom after 15 mins)

It's yummy :)
