We will be having my daughter (almost 5 years old) assessed soon and I was wondering if anyone has got through this if they can explain something to me.

I can understand how they test for motor skills (not our issues) but how do they test for sound and touch sensitivity? I've had to fill in some questionnaires that obviously ask relevant questions but how will they assess things things?

Does anyone know?

Primarily questionnaires like the one you filled out, I would imagine based on my experience with occupational therapists and special education eligibilities (I work as a special education teacher for an online school). These OTs aren't making diagnoses, but they are determining occupational therapy needs relevant to the school setting which can include sensory processing. I wonder if they might also include observations.
