I know cooking beer usually burns off the alcohol, but I'm dying for some beer-battered coconut shrimp, but want to know if it's safe.

i seriously doubt the amount of beer would have any effect. I continued cooking with wine for a few weeks before finding out that most alcohol does not burn off in cooking....the midwife said it was not worth worrying about, so i doubt a one off beer battered shrimp be a problem

You can safely have a moderate amount of alcohol during pregnancy anyway so I'm sure it will be fine - you've made me want them now!!! :munch:

I had beer batter chips last night and when I read the back it said 'No Alcohol', so I'm sure its fine :)

wow i have never heard of these....... they sound flippin yum.....

It is GOOD. Here's my recipe!

Batter
1 egg
1/2 cup + 1 tablespoon all-purpose flour
3/4 cup beer
1 1/2 teaspoons baking powder

1/4 cup all-purpose flour
2 cups flaked coconut
24 shrimp
oil for frying

DIRECTIONS

1. In medium bowl, combine batter ingredients. Place remaining flour and coconut in two separate bowls.
2. Peel shrimp, leaving tail on. Devein and butterfly, if desired.
3. Hold shrimp by tail, and dredge in flour, shaking off excess flour. Dip in beer batter; allow excess to drip off. Roll shrimp in coconut, and place on a baking sheet lined with wax paper. Refrigerate for 30-45 minutes. When ready to fry, heat 1" oil to 350 degrees F (175 degrees C) in a deep pan or pot.
4. Fry shrimp in single-layer batches, turning once, for 2 to 3 minutes, or until golden brown. Drain on paper towels.

Dip in marmalade dipping sauce.

1/2 cup Orange Marmalade
1/4 cup Dijon mustard
1/4 cup honey

YUM, i had beer battered fresh snapper yesterday... it was gorgeous!
Im not to sure if seafood and shelfish are safe though?!

my midwife said you cant eat shrimp in pregnancy. No shell fish?? Is that right?? alot of women are eatin shrimp and prawns and sushi etc etc where my midwife has said no to everything

My doctor said no uncooked seafood and no tuna, no other restrictions. If shellfish isn't properly cooked, you can get food poisoning. So just make sure everything is properly cooked, and no tuna.

I heard tuna was ok if it was only once a week for fresh (cooked) or twice a week for canned? Honestly, I think everyone gets told different things! I have been working on the assumption that shrimps/prawns are ok if they are cooked thoroughly and in a hot meal.

by the way, your recipe sounds delicious Aria.... I would never in a million years thought of mixing marmelade with mustard!
