I'm off to a hen weekend on Saturday (some of you may have seen my post about blackpool pleasure beach ha ha). I've been asked to do a snacky lunch for the 12 girls (along with 3 other people who I've never met, nice spanner in the works there). What do I make? I'm thinking at least one of The others will do sandwiches so I'm trying to stay away from them. I was thinking maybe a pasta or cous cous salad. Does anyone have any nice recipes or ideas? I need a veggie option too x

Pasta salad or curried rice salad is nice and easy.
My pasta is usually just olive oil and some herbs as I don't like other dressings.
Rice salad I use some pataks curry paste mixed with rice and diced peppers and onions, nice and tasty and easy to do :)

Can't think of anything else right now :)

I always make coronation cous cous. Cooked chicken pieces, dried fruit, sliced grapes, curry powder, a little mayo and a little creme fraiche. Just as nice without the chicken too, for the veggies. Goes down really well!
