I use a big lump of butter, melt in a pan.
Add one tbsp flour, mix
Add milk bit by bit, I use a high heat whisking constantly. And use about 400ml milk
Once thickened add a big handful of cheese
Pour over macroni, cauliflower etc
Bake in oven at 200 for about 45mins I think...I just check until it's golden.
I normally make a white sauce and add cheese.....but if I'm in a real hurry I just cook some pasta with either brocolli or peas and carrots, when it's cooked add some Philly cream cheese and cheddar. The pasta normally melts it all pretty quick and makes a nice thick sauce. If it's really gluggy I add a little milk.
If you don't put the pasta back on the heat and just let the cheese and Philly cream melt it normally cools down the pasta really quickly too
I normally keep some cooked chicken in the fridge and add that if I feel it needs some protein. If I add the chicken I put it back on the heat to make sure the chicken gets really hot.
