I am gluten intolerant and have been on a gluten free diet for 3 years. I've never felt this good my whole life. I am now 8 weeks pregnant and for the first time am having a difficult time with the diet. I don't cheat because I couldn't stand the side effects, but I'm having all kinds of cravings for foods that I can't have. Mostly things from restaurants, that are hard to make yourself. Not to mention, that I haven't been feeling well, so I really don't want to cook! In the past, I love to cook and bake and try to make gluten free alternatives, but I'm just too tired lately. Anyone else have similar experiences?
Have full blown celiac. Yes it is so hard when you are this tired. I ended up just picking up Amy's frozen dinners because it was easier last night and I was out of frozen meals I had cooked.
The doctor didn't want me to start trying until tests came back that my small intestine could absorb nutrients. Kind of important for a successful pregnancy. Tests came back good and I could not be happier. Much lower risk now for MC and a low birthweight babe.
This is my standard food list
I have to eat gluten, soy and dairy free, DH prefers to eat vegetarian if he can. It can seem daunting at first but I have found now that I am used To cooking without this stuff it is only the convenience I miss. The food can be much tastier and my dr says I am healthier than I have been in 10 years. I have included a bunch of links that made my food journey easer and tastier!

Hint #1. When you feel up to cooking make double what you normally make and store it in the freezer, then those nights you are exausted you can just throw that frozen potroast in the microwave and dinner is ready.
Hint #2. The waffles from gluten free goddess also freeze really well.
Hint# 3. Foods that are easy on a Glutenated intestine are also easy on your nausea. These are bananas, rice, apple sauce (use mussemans) spelling? Frozen pancakes heated quickly in the microwave. It is ok to have breakfast for dinner.
Hint #4. A quality rice cooker is amazing. Last night I was feeling crapy and DH has the flu. I just dumped some rice, frozen cooked shrimp and water in it and hit one button. Food was ready 40 min later. I chopped up an avocado, San j guten free soy sauce (or coconut aminos if you cant have soy or wheat)and it was like having sushi rolls in a bow and took me literally less than 2 min to prep. I have a zojuirushi 5cup fuzzy logic cooker.
Hint 5. Bacon while not amazing for you can be easy to cook. Get the Hormel black label bacon. Most bacon contains gluten because they add smoke flavoring to it. Hormell black label is safe. Reheat oven to 400, line pan with foil. Cook for 15 min or until crispy to your liking. 2 min of prep and you can chop it up with an egg you boiled earlier in the week throw it over rice or spinach for a salad.
Have yogurt and plain nuts in the house to snack on. Yoplait labels each run of their yogurt separately so you can see when say your strawberry yogurt was made in the gluten free facility.
