Anyone have a good, easy, healthy hummus recipe? It was recommended by my dietician from the GD clinic that hummus might be a good protein to give me some variety.

I just buy the pre-made hummus at the store, it's delicious on everything!
But I found this recipe for you, it seems to be pretty easy. :thumbup:

1 clove garlic
1 (19 ounce) can garbanzo beans, half the liquid reserved
4 tablespoons lemon juice
2 tablespoons tahini
1 clove garlic, chopped
1 teaspoon salt
black pepper to taste
2 tablespoons olive oil


1.In a blender, chop the garlic. Pour garbanzo beans into blender, reserving about a tablespoon for garnish. Place lemon juice, tahini, chopped garlic and salt in blender. Blend until creamy and well mixed.
2.Transfer the mixture to a medium serving bowl. Sprinkle with pepper and pour olive oil over the top. Garnish with reserved garbanzo beans.
 
Oooh I love making hummus! It's so much cheaper, tastier and more versatile than buying it from the shop. The above recipe is a great starting point - you can tinker with the quantities to suit your taste! I personally love it strong, with lots of garlic, lemon and black pepper. I would also include the oil in the blend rather than on top.

For even more variety, try blending in small amounts of roast red peppers, sundried tomatoes, olives, chilli peppers, the list is endless! Enjoy x
