Well I posted a request for it and nobody got back to me
So I decided just to go for it.........I'm not crazy BBQ chicken Lasagna does exist (they sell it in Frankie & Benny's)
Anyway if anyone fancies a change to the norm...this is what I done
Cubed 3 Chick Breast, fried until just cooked & stired in a jar of BBQ sauce (I cheated using a jar!)
Made Cheese Sauce....
25g (1oz) butter
50g (2oz) plain flour
400ml (14fl oz) milk
125g (4oz) Parmesan or Cheddar cheese, grated
(I'm so used to doing it I dnt weigh I just go for it) Here's hw to make it properly - use double if for more than 3 servings!
Melt the butter in a small saucepan, add flour and mix to a smooth paste. Remove from the heat, add a small amount of milk and mix until smooth, continue until all the milk is incorporated. Return to the heat, stirring constantly, and bring to a gentle simmer for 1 minute.
Layer some cheese sauce, Pasta, BBQ Chick, Pasta.... just keep going as you would a normal lasagna & top with cheese.
Could also chuck in some sweetcorn, diced pepper, whatever you fancy really! Next time I'll prop use more chick & BBQ sauce as I made quite a big lasagna (Enough for 6 people) and there wasn't enough BBQ for my liking although it was still nice
Makes a nice change!
Mmmmm!
