Need some help with weaning / routine for 6 month old

Hi all, just wondering if I could have a look at your routines, I have just started weaning LO officially.. I say officially because she has been 'trying' food for a little while just to get an idea of taste and texture (plus she often shouts at me while I'm eating so I share a bit of what I'm having e.g. some banana)
She has taken to solids really well and generally eats up whatever I've given her, which is so far just baby rice, porridge, fruit & the odd veggie (I think just carrot mainly) she will happily eat a whole pouch of Ella's kitchen fruit which is about the portion size I give of other things (maybe a bit more)
My main questions are -

How long did you give LO 1 meal a day and when did you move to 2 - 3? etc

How did you introduce dairy & gluten? (I've been told not to give LO dairy & gluten til after 6 mnths but now she is do I do it slowly ?? do I give her a chance to get used to fruits & veg ?)

Do I have to change how much milk she has atm she has? - (roughly, she never really drains the bottle) (also this varies depending on what time she wakes up/naps)

7am - 5-6 oz
8 am - porridge or fruit
11 am - 6oz
3 pm - 6oz
6pm - 6oz
10pm (sometimes dream feed) - 4-6oz
 
I think its very different for every baby, but just follow her lead. Start offering her a second meal now if she is finishing her other ones then gradually bring in the third and then snacks as well.

At 6 months DD only ate 1 meal in the evening and still had 5 or so bottles i think. Then about 8 months she had lunch and dinner. Around 1 she had breakfast too. She didnt take to eating very well until age 1 and then it really took off and she now eats anything and everything! She still has 2-3 bottles a day now at 17 months.

You dont need to try to cut down bottles, just give LO what she needs.

We are fairly new to weaning too - its been about a month. My baby is a little gannet, she will scoff and scoff but is very picky about not really liking real food, she will play with it and occasionally a bit will actually reach her mouth rather than the carpet and then she gags on it so she is only really eating meals of purees at the moment which she will eat very happily but I am trying to sneak lumps into it.

We started with a lunchtime puree, then a week later added in a breakfast and then a week later a dinner meal. The amount she eats has increased and her number of bottles have reduced. This is a typical day (times are very rough):

6.30 / 7am - 240ml (8.5oz) bottle, back to sleep for 1-1.5 hours or so
10am - pot of a mixture of baby rice, baby porridge and crumbled in weetabix (weetabix added after 6 months old)
12.30 - puree pot / pouch (ellas kitchen or plum as she wont eat my homemade attempts!) and water to drink
2.30pm - 240ml milk bottle
5pm - fruit pot / fruit puree pouch and water to drink
7.30pm - 240ml milk bottle
8pm - bedtime

the last couple days I've changed it up a bit and given LO her meal at lunch time, as I wanted to get her to eat some veggies and that would seem a bit strange for breakfast lol, so I steamed & blitzed some sweet potato which went down well.

Yesterday I gave her 2 meals, as in the afternoon I offered her a strawberry to munch on (yum!) and she was really going at it so I thought maybe she was hungry, I gave her some baby rice and she ate it up (was a fairly big portion too) Do you find your LOs are more hungry some days than others? She woke up super early this morning and then only drank 2oz! :dohh:
