OK, this recipe might seem a little odd, but DH (who is a huge beef/steak lover) adores it and asks for it all the time -- and it's super easy and pretty healthy, too! The best part is that you can modify by adding other veggies or different kinds of cheese... it's so easy, and so good!
Zucchini Sandwiches
2 small wheat sandwich rolls
1 medium zucchini, diced
1/2 cup tomato sauce
2 slices mozzarella cheese
2 tsp Italian herbs
1 tsp olive oil
Preheat the oven to 450 degrees.
On the stovetop, heat olive oil over medium heat in a med. sized shallow saute pan. Add diced zucchini to olive oil and cook, stirring, until zucchini is soft, or about 3 minutes. Turn heat to low and add tomato sauce and Italian herbs to the zucchini, stirring until zucchini is fully coated.
Cut the wheat rolls in half and spoon half the zucchini/sauce mixture inside each of the rolls, then top with one slice mozzarella cheese. Wrap each roll in aluminum foil until all sides are covered. Place the rolls into the oven and bake for 15 minutes, or until the cheese is melted. Enjoy!
