My husband is currently away in Canada and time is passing so slow :cry:

So I figured I would learn a few new recipes etc so wen he returns home I can cook lots of new meals I have learnt while he's gone I did this last time and it was nice however is time I'm stuck, plus we just need a change in meals haha

Looking for anything, starters, dinners, desserts, treats anything and to be cooked anyway - I have slow cooker etc... I love trying new things and it keeps me sane whilst me and kids get to enjoy all the new meals

Would really appreciate it ladies

I made a lovely cottage pie the other night from a new recipe I had. Not the most exciting dish in the world but I'd be more than happy to give you the recipe? X x
 
I've got a lovely recipe for salmon pasta, or a homemade chilli, if you want them let me know

I'll write the recipe up for you in the morning. It really was lovely. I'm trying to get a lot more organised in my house - meal planning etc so will be trying a lot of new recipes. Will gladly pass on any recipes I try out. X

Chinese Style Chicken & Sweetcorn soup?

Soup:-

Chicken Stock (either proper or cubes)
Sweetcorn
Chicken (I usually buy half roast chicken from supermarket & shred it)
Rice noodles broken into about 1" bits
Cornflour
Egg

Put the pan of stock onto boil, chuck in all the Sweetcorn, noodles & shredded chicken. Once the noodles have cooked, put about a tablespoon of cornflour into a cup & add a dash of cold water & mix it together. Add the mix into the soup a bit at a time until a desired thickness is achieved. Break egg into a cup & lightly whisk. Whilst stirring the soup, add a bit of egg at a time until all the egg has been used up & cooked through. Add salt/pepper/soy sauce to taste. You can make as much as you like & it freezes too.

Thai green curry:-

Green chillies
Lime
Lemongrass (I buy the paste in a jar, makes life easier!)
Coriander
Garlic
Ginger
Coconut milk
Chicken breast (or what ever meat you want)

Finely chop chillies, ginger, garlic & coriander. I tend to use a fine grater for the ginger & garlic. For the chillies, I chop the top off then roll it to loosen the seeds firsts then tip it up & bang it. The seeds just fall out then. Put it all in a bowl, together with the lemongrass paste & lime juice + rind. Chop the chicken/meat into bitesize bits & mix in all the garlic, chillies etc. Cover in cling film & bung in fridge for as long as poss. (I do this on a morning for tea time). When ready, fry gently until the chickens nearly cooked, then add a tin of coconut milk & simmer until chickens thoroughly cooked, add some fresh chopped coriander. I sometimes add mange tout & baby Sweetcorn as well. I serve with boiled rice which I've added lime juice & lemongrass too.

I haven't included measurements simply because I don't measure anything. I just chuck stuff in. We don't like it spicy so we would only use 1-2 chillies without the seeds but I like quite a lot of garlic & ginger so usually use 3-4 garlic gloves & same amount in ginger. Just tweak it for your family.
 
It's always good to put a teaspoon of palm sugar and a few dashes of fish sauce in a Thai green curry to balance the flavour :)

I always forget to buy the palm sugar & fish sauce.......I've just resigned to making it without now!
 
Ahhhhh I never used to but ever since I started using both I cannot make thai green curry without it now! They both last for ages in the fridge too. I am a total thai food nut though :haha: I could easily live off green curry, coconut soup and sweetcorn cakes mmmmmm.
 
We love soft tacos at our house. A few favorites:

1) blackened cajun fish in soft corn tortillas with some shredded cabbage and lime sour cream, pickled jalepenos

2) carne asada grilled steak sliced really thinly and served in soft corn tortillas with pickled onions and crumbled feta or other cheese, chopped avocado, sometimes adding some sauteed or grilled corn kernals or zuchini


3) lime cilantro pork tenderloin soft tacos from Cooking Light magazine recipe

We just use a mild white fish, pat it dry, then press cajun blackening seasoning all over it (we make a homemade blackening mix, but you can buy it at the store too). Then we fry the fish in a pan in just a tablespoon or so of olive oil till it's firm and cooked through. We break it up into big chunks, then serve it in the corn tortillas (blackened a bit over the stovetop flame). We top it with pickled jalepenos from the grocery store (for more heat), shredded cabbage, and sour cream with some lime juice and cumin mixed in. Sometimes some salsa too, and lots of fresh cilantro.

DH loves them even though he usually doesn't care for fish.

Try Schwartz spices. They do a Cajun mix in their "sizzle & grill" range. It's where they have all the dried herbs & spices.

You're so welcome. I love to cook and share recipes.

Cajun blackening seasoning is easy to make at home:

-1/4 c paprika
-1/8 c dried thyme
-1/8 c dried oregano
-1 T ground cumin
-1 T onion powder
-1/8 c garlic powder
-1/8 c dried basil
-1 T black pepper, ground
-1 T cayenne (red) ground pepper (adjust depending on how spicy you like things)
-1 T salt

mix all together. lasts foever in cupboard and makes multiple recipes.

We use it on chicken sometimes too and I mix it into tuna or salmon salad (sandwich spread) sometimes to spice it up.
 
Made something new for dinner tonight -- White Chicken Chili. Thought of you and wondered if you might want to try it.

I think of it as more of a spicy white bean and chicken stew. I followed a recipe from this blog with a few changes:
–added spices and 3T flour to chicken and onion before adding stock (we like it thick)
–left out the half and half (again – thick)
–added 1 c corn kernals
–used thighs instead of breasts
–used small white beans and mashed one can before adding (for thickness and to hide some beans from my bean averse hubby)

Also made a yeasted cornbread to go with it, but that turned out dense and rubbery. Going to try to make french toast with it tomorrow morning to see if it can be salvaged with maple syrup :)
