thought i would share this.. i just kind of invented it a few years back but we both love it, and now my sister & dad make it too!!!
i call it 3c chicken lol.. (cumin corriander & cardamom pods)
i chicken breast per person
ground cumin
fresh corriander (i have used dried and its pretty much the same..)
cardamom pods (pre soaked if possible)
large onion
mushrooms
large carton double cream (if ur feeling really naughty the extra thick channel island cream from M&S is amazing in it!)
taglatelli verdi (or whatever pasta u prefer)
fry off chicken, with onion & mushroom, add a heaped tsp cumin, few cardamom pods & a good pinch of the fresh coriander while its cooking..
put pasta on just after u start the chicken, as it takes no time at all to make this!
when the pasta is a min or 2 way from ready, add the cream, another good pinch of cumin & corriander, and stir through. heat but dont boil the cream.. just warm is good..
serve with the pasta, & garlic bread...
