Stuffed mushrooms

Serving Size: make as many as you like, one per person if starter, about 4 each for a main.

Ingredients
• Large flat mushrooms like portabello
• Bacon
• bread
• leaks
• cheese (any if desired)

Preparation
No prior preparation is required.

Instructions
1. Pull the storks out of the mushrooms and blitz them in a food processor along with chopped leaks, bacon (smoked or unsmoked depending on taste) and a few ripped up pieces of bread untill a chunky stuffing consistancy. Cook this up in a sauce pan in a little olive oil, add any seasoning or herbs according to taste, gently warm through for about 10 mins. You do not need to brown this. Then stuff the mixture into the raw mushroom caps and grate a little cheese on top if you wish (normal chedder, mozarella, stilton, goats cheese all fine) And then cook in a moderate oven for about 15 mins. Great served on a mixed leafe salad. Can always bulk it out with some nice hot new potatoes.
2. If wanting to make a low fat option, cook with turkey bacon and omit the cheese. This then a very low fat and healthy dinner for anyone dieting.
