I really like the name Kitty but also like to have a longer name for it to be shortened from....but I can't think of any :dohh:
I don't really like Catherine or Katrina and I can go Caitlin.

Any ideas?

You could just use Kitty.
You've pretty much ruled out all of the names I would have suggested.

Katniss?
Katerina
Kaylee

I'm really clutching at straws here :haha:

I have a friend named Kate whose parents called her both Katie and Kitty growing up... but that's not a longer name of course.

Only one I can think of really is Katherine.

My sister-in-law's given name is Katie. She goes by Katie or Kate. My in-laws didn't want such a formal name. You could name her Kate or Katie, which are usually nicknames, and then nickname her Kitty.

Other K names (I don't think you have to use one with a "t" in it.):
Katyn
Kaelin
Kendra
Keira
Kendall
Kadence
Kaya
Katja
Karlie
Karolina
Kasia
Kalista
Kassidy
Kelita
Kiandra/Kiana
Kennedy
