Ive got one from my days of weight watchers if you're interested. About 4 large carrots diced. Boil in pain with 1 pint stock(i think.. sorry it's been a while since i made it), sautee a bit of grated ginger, small onion, garlic and chilli peppers(optional), add to the boiling carrots, once soft puree. Salt, pepper etc to taste. Pretty quick and guilt free!! Fat free so eat as much as you like. You can try coriander instead of ginger if you prefer
